Vinificatie & Rijping

  • Handmatige oogst van elke variëteit

    • Reducerende druiven (Mourvèdre, Syrah) in eikenhouten fermentoren

    • Oxidatieve druiven in traditionele geëmailleerde betonnen tanks

  • Malolactische gisting voltooid per variëteit

  • Samenvoeging van alle druiven

  • Rijping: 1 jaar in grote eikenhouten foudres

  • Botteling: na rijping en blend
